Goji bowls, say hello to the new Acia bowl! If you’re looking for some serious breakfast inspiration then this post is for you! We strongly believe that when it comes to food the more colour the better, which is one of the many reasons why we love Goji Bowls! Not only are they jam-packed with fibre, iron, antioxidants, vitamin C & A, but they’re also 100% vegan, what more could you want in a delicious berry?
What are Goji Bowls?
Goji bowls are, you guessed it a bowl filled with the delicious crushed berries and a bunch of other super healthy ingredients that we just can’t get enough of! The fun doesn’t stop there, once the base mixture is created the bowl is then topped with all of your favourite breakfast contents, we’re talking yoghurt, honey, berries you can even add in some chocolate chips because why not? Go goji for our berry-based bowl!
- 1 cup of coconut milk
- 1 tablespoon Pipkin Coconut butter
- 3 tablespoons Chia seeds
- 1 tablespoon raw walnuts
- 1/3 cup mixed berries (frozen or fresh)
- 1 tablespoon honey
- 1 tablespoon Pipkin Goji berries
Combine all of the ingredients in a blender, mix together to until you get the right consistency which should be similar to a thick yoghourt, to thicken simply add more frozen berries or coconut butter.
To complete your Goji bowl add whichever toppings tickle your fancy. Here at Pipkin, we like to sprinkle our bowls with the following ingredients:
- 1 tablespoon of goji berries
- 1 tablespoon of hemp seeds
- Fresh blackberries and raspberries
- 1 tablespoon sunflower seeds
