Bake delicious vegan mince pies great for Christmas parties, gifting as part of a hamper or simply indulging in whilst watching your favourite Christmas movies. We have a scrumptious vegan recipe suitable for EVERYONE!
- 1 large apple peeled and grated
- 200g mixed dried fruit
- 390g cherries in kirsch
- 1 orange zested
- 1tsp cinnamon
- 1 tsp ginger
- 150g dark sugar
Preheat the oven to 180 degrees. Add in all of the mincemeat ingredients into a deep baking tray, add a layer of foil over the baking tray and place in the oven for 35 – 40 minutes, until all of the sugar has melted. Set aside to cool, you can also put the mincemeat in the fridge to chill as the mincemeat needs to be cold before applying to the pastry.
Add the coconut flour and coconut oil into a mixing bowl and mix together using your fingers until the mixture is similar to a bread crumb texture. Add water one tablespoon at a time and keep mixing with your hands until the mixture turns into a dough consistency. Tip the dough onto a clean surface and pat into a rounded dough ball, cover with cling film and leave in the fridge to chill for 20 minutes.
Remove the pastry from the fridge. Cut off one-third of the pastry and keep it covered. Cut the rest of the pastry into 5 chunks, add some coconut flour to the kitchen surface and roll out the pastry to a thickness of 0.5cm. Next cut out circles using a 9cm biscuit cutter and add to a cupcake tin.
Next, add a heaped spoonful of mincemeat into each of the circles. You can now roll out the rest of the pastry set aside, using a star biscuit cutter cut out as many stars as you need to top each pie.
Heat the over to 180 degrees. Whilst the oven is heating base the pastry in soya or non-dairy milk. Place in the oven to bake for 30 minutes or until the pastry is golden. Remove from the oven leave to cool. To finish sift icing sugar on top and watch them go!
